Ingredients
- 2 cups rice
- 1 cup mixed vegetables, diced
- 2 tbsp ghee
- 1 tbsp ginger paste or powder
- 1 bay leaf
- 1/2 cup chopped onions
- 1 tsp chopped garlic
- 1/2 inch ginger grated
- 4 cups water (you can use vegetable or chicken broth)
- 3 tsp salt (none if using salted stock)
Steps
- Heat ghee in a pot over medium heat
- Saute the onions and garlic until translucent
- Add the ginger paste/powder and bay leaf and saute for a minute or so
- Add in the rice and saute for 3-5 minutes until all the rice is coated with teh ghee
- Add in the water and salt (or the stock)
- Bring to boil
- Turn down heat to simmer
- Cover and simmer for 23 minutes
