Vegetable Pulao – 1

Ingredients

  • 2 cups rice
  • 1 cup mixed vegetables, diced
  • 2 tbsp ghee
  • 1 tbsp ginger paste or powder
  • 1 bay leaf
  • 1/2 cup chopped onions
  • 1 tsp chopped garlic
  • 1/2 inch ginger grated
  • 4 cups water (you can use vegetable or chicken broth)
  • 3 tsp salt (none if using salted stock)

Steps

  1. Heat ghee in a pot over medium heat
  2. Saute the onions and garlic until translucent
  3. Add the ginger paste/powder and bay leaf and saute for a minute or so
  4. Add in the rice and saute for 3-5 minutes until all the rice is coated with teh ghee
  5. Add in the water and salt (or the stock)
  6. Bring to boil
  7. Turn down heat to simmer
  8. Cover and simmer for 23 minutes
